Why a pressure cooker makes boiling water extra hot

In an open pot at sea level, water boils at about 100°C.

A pressure cooker traps steam under a sealed lid. That steam pushes harder on the water, making bubbles harder to form. The water must get hotter to boil—often 115–120°C, depending on the cooker.

Hotter boiling water cooks food faster. Both pots can bubble at different temperatures.
