Hawaii sits on the Pacific plate, a huge moving piece of Earth's outer shell. As it moves northwest, it carries older volcanoes away from the hot area below.
Melted rock can rise above that hot area and build new volcanoes. The islands did not all form where they stand now. Their different ages along the chain help show which way the plate has moved.
