Water alone struggles to carry grease off a plate. Soap molecules—tiny pieces of soap—have one end attracted to water and another that attaches to grease.
As you scrub, they surround bits of grease, with their water-attracting ends facing out. This helps keep the grease spread through the water so rinsing can carry it away.
Otherwise, loosened grease could gather on the plate again.
