Why one checkout line can be fairer than choosing your own

You pick the shorter checkout line. Then the first customer has a problem, and people who arrived after you get served in the other line.

With one shared line, the next person goes to whichever checkout becomes free. Nobody has to guess which cashier will finish first.

The line can bend around barriers to fit the room. Sharing the checkouts makes the difference, not the bends.
